Clam Ceviche
- 1 51 oz. can Sea Watch Chopped Sea Clams (drain juice and reserve)
- 1 cup of clam juice
- 4 cups of diced and seeded Tomatoes
- 1 small Red Onion finely chopped
- 3 Limes juiced
- 1 Avocados (diced)
- ½ cup finely chopped Yellow Bell Pepper. Hot sauce to taste
- 12 cups of cooked Popcorn (sprinkle lightly with paprika for color)
- Mix all ingredients except the popcorn together in a glass bowl and chill for one hour.
- Remove from refrigerator and mix again.
- Serve 6 ounces in a small dish with a cup of popcorn on the side.
- Popcorn is added to the ceviche a few kernels at a time to add crunch and texture.

Clam Gazpacho
- 1 46 ounce bottle of Tomato Juice
- Add the tomato juice to the ceviche recipe less the popcorn and chill.
- Serves 15 8 ounce servings
