Clam Cakes

Ingredients: Preparation:
  1. Melt butter in skillet.
  2. Stir in onions and simmer 3 minutes.
  3. Combine with eggs, cream, soft breadcrumbs, clams, celery, dry mustard, chopped parsley, salt, and paprika.
  4. Chill mixture for 2 hours.
  5. Shape into cakes.
  6. Lightly dust with flour or breadcrumbs.
  7. Melt 1 tbsp. butter in skillet.
  8. Quickly brown the cakes on both sides.
  9. Lower the heat and cook the cakes slowly about 6 more minutes.
Yield: 12 3 oz. cakes
