Clam Cakes
Ingredients:
- 1 51 oz. can Sea Watch Chopped Clams, drained
- 2 tbsp. butter
- 2 tbsp. onions, minced
- 2 eggs
- ½ cup cream
- ½ cup breadcrumbs, softened
- ½ cup celery, finely minced
- ½ tsp. dry mustard
- 2 tbsp. parsley, chopped
- ½ salt
- ½ paprika
- flour or breadcrumbs
Preparation:
- Melt butter in skillet.
- Stir in onions and simmer 3 minutes.
- Combine with eggs, cream, soft breadcrumbs, clams, celery, dry mustard, chopped parsley, salt, and paprika.
- Chill mixture for 2 hours.
- Shape into cakes.
- Lightly dust with flour or breadcrumbs.
- Melt 1 tbsp. butter in skillet.
- Quickly brown the cakes on both sides.
- Lower the heat and cook the cakes slowly about 6 more minutes.
Yield: 12 3 oz. cakes
