Clam Puffs
Ingredients:
- 2 51 oz. cans Sea Watch Chopped Clams, juice drained and reserved
- 2/3 cup butter
- 2/3 cup onion, minced
- 2/3 cup celery, minced
- 14 eggs
- 6 cups breadcrumbs
- 1 pint cream
- 1/3 cup lemon juice
- 2 tsp. parsley, chopped
- 1 tsp. salt
- 1 tsp. paprika
- 1 tsp. white pepper
- 1 cup milk
- 2 cups flour
Puff Mixture:
- Sauté onion and celery until transparent.
- Drain off liquid.
- In a large bowl, combine clams and juice, celery, onion, lemon juice, parsley, spices, cream, 2 eggs, and 2 cups of breadcrumbs.
- Chill for 1 hour.
Egg Coating:
- Combine remaining eggs and 1 cup milk, blend together.
- Form puff mixture into silver dollar size balls.
- Roll in flour; dip into egg mixture, coat with remaining breadcrumbs.
- Deep fry for approximately 10 minutes at 350ºF. Serve warm.
