Clams Sauce with Basil
Ingredients:
- 15oz can Sea Watch Whole Ocean Clams, drained
- 1½ cup Dry white wine
- ¼ cup & 2 tbsp Olive oil
- 2 cups Onion, finely diced
- 2 tbsp Garlic, minced
- 2 tbsp Lemon juice, fresh
- 1½ cups Basil leaves (packed), chopped
- Salt, to taste
- Tabasco Sauce, to taste
- ¾ lbs Linguine, cooked according to directions
- Garnish: Pepper and grated Romano cheese
Method:
- Sauté clams in 1-cup wine for 4-6 minutes.
- Reserve liquid and set clams aside.
- Heat oil until rippling; add onions and garlic, sauté, for 4 minutes, just before serving, stir in basil, clams, salt, and Tabasco.
- Dissolve starch in remaining wine and add.
- Bring to boil, stir until thickened and remove from heat.
- Ladle sauce over pasta, garnish with grated cheese and pepper.
