Hatteras Style Clam Chowder
Ingredients:
- 51 oz can Sea Watch Chopped Clams, with juice
- 46 oz can Sea Watch Clam Juice
- 2 tablespoons vegetable oil
- 2 Medium onions, chopped
- 8 stalks celery, sliced
- 6 carrots, sliced
- 7 cups peeled, cubed white potatoes
- 1½ teaspoons dried thyme
- ¾ teaspoon ground black pepper
- 13 slices crisp cooked bacon, crumbled
Method:
- In a large pot over medium heat, cook onion, celery and carrots in oil until they begin to soften.
- Stir in potatoes, clams, clam juice, thyme, pepper and bacon.
- Bring to a boil, then reduce heat and simmer 20 minutes, or until potatoes are tender.
